Responsible for the hygiene of the hotel / catering / food & beverage / kitchen.


Monitor and Oversee Financial Management of the Department

  • Ensures development of annual budget and cost management, within the context of Hygiene operations.

Manage the Staff

  • Ensures appropriate staffing consistent with needs and within the constraints of the organization’s physical and financial resources;
  • Recruits, selects, orients and develops staff to meet standard performance;
  • Plans, organizes, directs, coordinates the Food & Beverage Service operation’s work plan; assigns projects and programmatic responsibilities; reviews and evaluates work methods and procedures; meets with staff to identify and resolve problems.

Develop, Plan and Deliver Programs and Services

  • Makes daily rounds to check on Hygiene practices in kitchen and F&B outlets;
  • Checks staff complying with Food Safety requirement and report to Hygiene Manager;
  • Assists and performs all procedures and protocols for maintaining an excellent sanitation and hygiene environment for NagaWorld;
  • Explains Food Safety protocols in Khmer language to local staff;
  • Daily checks of in coming food at the Receiving and reports to the Hygiene Manager;
  • Checks on the cold storage, temperature recording and cleanliness of the chiller and fridge;
  • Checks on general cleanliness of kitchen, staff canteen and back of the house;
  • Conducts hygiene inspections/audits throughout all food handling areas and generate respective reports;
  • Conducts monthly supplier audits and sent report to the Hygiene Manager;
  • Coordinates with appointed laboratory, and responsible for scheduling the regular sampling of food and water for bacteriology and chemical analysis so as to ensure the food and water quality meets the international standards;
  • Monitors food served in functions and ensures high risk food samples are taken and kept in freezer for at least 7 days;
  • Conducts regular Food Safety Management Training program to all food handlers including new joiners;
  • Responses to ensure all food handlers have been medically examined and TAB vaccinations given before sending them to their respective work stations;
  • Responses for effective and efficient maintenance of records related to the Hotel’s Hygiene and Sanitation Program;
  • Other tasks assigned by Hygiene Manager.
  • Bachelor degree or equivalent education required
  • Minimum 4-5 years of experience related to the job
  • Proficient in Ms. Word & Excel
  • Able to communicate in English and Khmer, other Language is also preferable - Chinese, Vietnamese and/or Thai
